Tried It, Loved It: April Edition

I would like to create lots of new recipes for the blog, but it is hard getting good pictures when it’s dark by the time you get home. And I also wanted to keep a record of the good recipes that I would eat again since my Pinterest boards are getting a little out of hand. So instead of posting my meal plan recipes for the week ahead, I’m only giving you the GOOD recipes that are tried and true! Hope you can get some ideas too!


Pancakes Tried It, Loved It: April Edition

So good! Keeping this recipe on hand. Didn’t have almond flour and used almond meal instead, also didn’t let the eggs get to room temperature and they turned out fine. I topped them with a frosting made of almond butter, maple syrup, and coconut with a sprinkling of hemp hearts.

Buffalo Baked Eggs Tried It, Loved It: April Edition

To make:

  1. Crack 2 eggs in a greased pan on medium heat
  2. Cook for a few minutes until whites are set but yolk is runny
  3. Put a slice of sprouted bread in a ramekin, then the eggs, then top with 2 teaspoons blue cheese and hot sauce.
  4. Broil on high for a few minutes until cheese is melty!
  5. Add diced avocado to cool off your tongue.

lunch Tried It, Loved It: April Edition

So moist and sweet. Most of the substance was from the grated apples, which packed a lot of nutrients. I baked them for 30 minutes, which I think was too little time. Next time I will bake them for 35-40 minutes. I also topped them with unsweetened coconut shreds! Just like dessert. Yum!


I made this in the crockpot. I swapped out the canned tomatoes for a can of tomato paste and a cup of roasted red pepper sauce, swapped the fresh spinach for frozen spinach, the dried basil for fresh basil, and the sausage for Italian Chicken Sausage. Definitely needed to remove the casings of the sausage before cooking. I dumped everything in the crockpot except for the noodles, cooked on low for 8 hours, then added uncooked whole wheat shells for 10 minutes on high. Sprinkled on a bit of mozzarella and voila!

Stew Tried It, Loved It: April Edition

The best stew! We did this in a crockpot and added the spinach in the last 10 minutes of cooking. I also added chopped onions and an extra cup of chicken broth.

This was delicious. I will use about half of the butter next time and add more veggies.

Also good. Used half of the olive oil and hot sauce for the dressing, used less cheese, and a bit less quinoa with more broccoli.

Gluten Free Meyer Lemon Mug Cake Tried It, Loved It: April Edition

The best mug cake I have had. No spongey-texture, only fluffy light goodness!

Incredibly easy. I scooped servings into cupcake liners along with animal crackers for people to have their individual servings. I should have bought a second box of animal crackers.

Oatmeal Cream Pies Tried It, Loved It: April Edition

Like I said in the post, I ate 4 of these in one day. I think that speaks for itself.

Great flavor, but they were very fragile. If I make these again, I might put more substance so they stick together better.


I made this for a group, but have been drinking it around the house. Very flavorful, and mint is good for digestion so this is the perfect drink post-meals. Best when consumed within 2 days.

  • Orange Ginger Fizz

Water Tried It, Loved It: April Edition

Add fresh cut oranges to pitcher, half a lime sliced thinly, 1/2 an inch of fresh ginger root sliced thin, and club soda. Let steep for 2 hours. Best when consumed within 2 days.

I love carbonation, and with the fresh ingredients it is even healthier. The flavor was good and the ginger helps to relax the stomach and release any nausea.
